Buckwheat and date flapjacks

Hi everyone,

Here's some buckwheat flake and date flap jacks that I made. Buckwheat flakes are smaller than oat flakes but they make great flapjacks especially of you don't eat oats like me.

I boiled the dates for a few minutes in a little water to make them softer.

Here's the recipe 225g buckwheat flakes 170g butter 50g brown sugar 2 table spoons of golden syrup 125g chopped dates (already softened in boiling water) a little cinnamon and a little milk.

First melt the butter golden syrup and sugar in a pan then turn the heat down and add the buckwheat flakes and cinnamon and stir thoroughly and add the milk last to make a soft smoother cookie before spreading in a baking tray and baking for between 25 and 35 mins depending on how thick they are.

Buckwheat contains magnesium and iron making it a great alternative to many grains and its gluten free. And I love dates so this is a particularly nice combination and because of the natural sweetness of the dates the sugar content.

Your buckwheat date flapjacks look and sound wonderful. They remind me of brownies/coffee cake. Hope you enjoy them. :-)

Hi Leah, thank you and what a good idea coffee flapjacks, they do look dark because buckwheat is dark brown. 😊

You're welcome for both. Thank you for letting me know about the buckwheat and why the flapjacks are that shade of brown. Never knew that buckwheat does that to certain baked goods/other foods. :-)

It was store bought but I was comfortable with the ingredients which were only buckwheat, water, millet, ground flax seeds, sourdough culture, olive oil and sea salt.

Flapjacks are wonderful and especially at this time of year. Yours look really good πŸ˜‹It’s been force 9 wind here today and sleet/hail/snow, definitely not a day for sitting outside, I can hardly believe it can be such different weather β˜ƒοΈ

Hey thanks HungryHufflepuff I do like flapjacks.

The weather has been all over the place as we’ve had relentless rain for days but it was nice yesterday but the temperature has dropped today so time to wrap up.
