Here's some buckwheat flake and date flap jacks that I made. Buckwheat flakes are smaller than oat flakes but they make great flapjacks especially of you don't eat oats like me.
I boiled the dates for a few minutes in a little water to make them softer.
Here's the recipe 225g buckwheat flakes 170g butter 50g brown sugar 2 table spoons of golden syrup 125g chopped dates (already softened in boiling water) a little cinnamon and a little milk.
First melt the butter golden syrup and sugar in a pan then turn the heat down and add the buckwheat flakes and cinnamon and stir thoroughly and add the milk last to make a soft smoother cookie before spreading in a baking tray and baking for between 25 and 35 mins depending on how thick they are.
Buckwheat contains magnesium and iron making it a great alternative to many grains and its gluten free. And I love dates so this is a particularly nice combination and because of the natural sweetness of the dates the sugar content.
