Today I made stuffed bell peppers with my new discovery plant based beefless ground (Gluten-free, certified vegan, kosher and dairy free).
Main ingredients: beefless ground, mushrooms, bell peppers, black beans, tomatoes, onions, cilantros, serrano (spicy), and eggs to bind all the ingredients together.
I like to bake them in the oven as I can eliminate unnecessary oil usage. You can add your favorite cheese if youβd like and have with rice or bread. I just like to eat by themselves with lettuce and mints.
Dessert: oatmeal cookie and mint tea.

What a colorful display! This is what eating from the rainbow should be. Even with one of them is enough for a fantastic restaurant quality dish that will nab you lots of compliments ππ
Aweee Iβm glad I brought back nice memories for you! π€πYes we incorporate a lot of stuffed veggies dishes as our traditional food. Iβm sure you tried stuffed bitter melon also, such a healthy and acquired taste dish my mom usually makes for our family. π
When it is steamed, it is quite bitter as you experienced in many Hongkong breakfast Dim Sum and can be soaked in too much oil as many usual Chinese dishes. What my mom does is she cooks them in broth with mushrooms, veggies and somehow the broth can mellow out the bitterness of mellon. She stuffs with fish paste(just like how we make fish cake). If anyone can handle the bitterness of it, it is extremely beneficial for your health as it can reduce your blood sugar, cholesterol, cancer fighting and loads of vitamins and nutrients. I had a hard time eating them but as time goes by, I grew the taste of it. π π

i did not get time today to cook anything but I will next week, tonight I am only going to be having jacket potatoes with sweet and sour vegan chicken style pieces................... between you and me I am quite looking forward to that.
