Indonesian salad, literally mix-mix.

My version has boiled eggs, bok choi, beansprouts, tomato, cucumber and prawns. Other ingredients could include cooked and chilled potatoes and beans, tofu, sprinkle prawn crackers on top for crunch, lettuce, cabbage etc etc. Google gado gado for inspiration. I used prawns instead of prawn crackers because I don't eat carbs, but they weren't at all crunchy ๐Ÿ˜

Vegan versions can be easily made, but if you eat eggs you should include them.

It's topped with a peanut sauce made with a Thai curry paste (I used jungle curry, because that is what I have), peanut butter and coconut cream or coconut milk. Cook on the stove top or microwave, and adjust the proportions to your taste.

That looks delicious. I love a hard boiled egg in any salads but never know how many you should safely have in a week?

I don't believe there is any limit. We are given all sorts of dietary advice, based only on theories. The theory was that cholesterol is bad, and eggs contain cholesterol so eggs are bad. But it turns out dietary cholesterol doesn't affect serum cholesterol because our bodies manufacture cholesterol to replace what is missing from our diet.

Eggs are probably the most complete food there is, considering it contains all the nutrition needed to grow a chick ๐Ÿฅ

Cleveland clinic reports there is no recommended allowance for consumption of eggs for a healthy person. Tried to get more info from Harvard, but was lacking......โค๏ธ๐Ÿ„โ€โ™€๏ธ
