This is what I had for dinner tonight along with a little trio chocolate ice cream and diet iced tea. The quiche is made with fake bacon bits, brown rice, Swiss cheese and cheddar cheese. The entire meal is 56 total carbs. when you have the ice cream for dessert. Everything was really great and filling. We are going to have leftover quiche for lunch on Monday.

The fake bacon bits are made from soy. My parents don't eat real bacon in the house.
Thank you for saying that about the quiche. I love having quiche any day/evening. I especially like when we have leftovers for the next day or two, too!
We'll see about the ice cream for tomorrow. It depends on what else we have with the main part of the meal.
