So I tried this for dinner last night, as I’m trying to cut down on carbs. Home made beef chilli but instead of rice, I chopped some courgette, leek, tomato and green beans, added garlic granules and dried oregano and 100ml low salt veg stock, baked in the oven with just 20g of cooked macaroni mixed in and topped with 20g of low fat cheddar to give a crunchy topping. I was actually really pleased with the results...it was delicious! Even got my husband to try it (as he sat beside me with his large plate of rice lol)... and he said he’ll have to same as me next time! 😁

Sounds tasty! When trying to cut carbs i previously found eating starchy veg instead of carbs helped fill me up, string beans, swede, carrot and parsnip mash, cauliflower mash, making myself hungry thinking about it!
