My daughter has been coming over each week and cooking a meal for us whilst I’m laid up.
This week it was Vegetarian Burrito Bowls. The base is black beans, butter beans, corn kernels, onion and taco seasoning cooked up together and served with rice, lettuce, tomatoes, cucumber, red onion, avocado, coriander, lime juice, sour cream and corn chips. It was delicious and there are leftovers so I’ll have it again for lunch today.
