My husband and I enjoyed lunch out today. My Maple Roasted Pumpkin and Freekah salad was divine, served with some smoked salmon. The salad contained pumpkin, fetta, barley, rocket, mint, basil, parsley, red onion, olives, tomato and a Chilli maple dressing.
I love discovering new ingredient combinations which I can try next time I make salad 🥗
