As for herbs use dried or fresh. Understand be careful fresh. Basil goes black in freezer so blender use this add make sauce, then add herbs Basil blend .

Italian ones buy in the shops but pricey.
I buy on line individual herbs make my own dried mixes.
If you buy jars all added in dried herbs want to buy pay excessive costs of course not make your own.
Bags freezer zip bags freezer clip or other sealed bags to use put into a another bag sealed and label.

Italian herb mix. All dried One teaspoon of each keep in a sealed jar. Basil, Parsley, Oregano, Thyme, Fennel Seeds.
Chop change that Add Rosemary if you wish to but strong can do this mix.
Rosemary Thyme, with Garlic Onion Powder. Paprika.
Spice rubs Italian style.
Oregano, Ground Coriander, Paprika, Rosemary Thyme, Fennel Seeds.
Spicy one.
Chilli flakes, Paprika, Smoked Paprika, Coriander ground and Cinnamon .
All can be added Onion Garlic Powder to each mix.
Med style mix of Spices chop change some are Italian based, some are North African mixes.
Cinnamon, Coriander Ground, Cumin .
Paprika, Cinnamon, Coriander Ground, Cumin Turmeric.
Turmeric Ginger Paprika Cinnamon, Cumin.
Note Turmeric is always added small spice amounts because can take over.
Paprika as colour.
use half teaspoon chillies quarter just be careful add more if you wish to.
Too many spices can be a strong flavour as it is adapted changing learning.
Add to a bowl of hot water or use Olive Oil lemon Juice for a rub always measure.
Tip add rub mix to plastic zip bag for convenience add meat and seal rub over the bag can be left a few hours then to sauté pan to seal.
Any residues use water to empty add to recipe when cooking.

If defrosting can add to a blender if you so wish make a blitz up sauce sieve and cook through.
