Here's what I made for dinner tonight, I used2 eggs milk strong cheddar cheese onion mushroom tomato potato with parsley celery salt and black pepper with gluten free bread crumbs on top. I had it with a salad and it went down a treat.

That's fantastic! Leftovers taste really good after a day or two of sitting in the refrigerator. I have leftover Veggie Chili from last night's dinner ready for lunch today.
Hi there Necron01 no I partly caramelised the onion in a little oil with the mushrooms tomato and sliced potato while the oven warmed up and I mixed the egg with a little milk and grated some cheese then added it all together and whacked it in the oven. π
Looks lovely, Iβve never thought of baking it in the oven, usually do it in a frying pan and then under the grill for the top. This is much easier, thanks for the tip!
