Oven roasted vegetables?

I just love oven roasted vegetables - just cut up 5-6 different vegetables into small pieces - whatever you have or is readily available/cheap is good. Sprinkle some olive oil, balsamic vinegar, salt, pepper and cook them - serve them with a small amount of meat/fish/chicken - Yum!!!

BUT - I am looking for alternative "flavourings" - any ideas please.

I use garlic, chilli and paprika - i like the smokey spicy taste

I like the herbs/pepper/garlic combo too as several of you have suggested. For something spicier I like ras-al-hanout with lemon juice and a splash of maple syrup, or brush with chipotle paste.

I will sometimes use a little curry paste to marinade or just sprinkle chilli, garlic, paprika and herbs

I live with them too, make sure to add some turmeric for information just in case
