I am currently roasting vegetables sat on a thin covering of olive oil. I am worried as to if it will make me gain weight. I am meant to be maintaining 70kg. It is hard work!

That is a relief. I love my vegetables and roasting them in olive oil is just a bit easier for me.

You could try using the olive oil spray over the veg, uses less oil.
Hello Julie, a good grade Olive oil is the best and will not make you gain weight, also pure virgin coconut oil, the health benefits are amazing. Stay away from processed oils and fats, no canola oil , no sunflower oil, and definately no margarine as a spread, it has no goodness in it at all.
Olive and coconut oil is the the best. ..and rape seed oil is also very good. ..I lived in Germany for a short time rape seed oil was very popular.
You do know that olive oil is high in calories..In one liter olive oil of extra light is what I use for cooking has 8000
Calories.
I also use soy bean oil that has only 2000 Calories in one liter and your roast veg will still taste good.
Coconut oil I only use in making soothes.

Olive oil still has lots of health benefits, and like anything should be used in moderation along with a healthy diet.

I use either a spray for olive oil or simply rub a tiny bit in by hand - Olive oil is really healthy for us so probably best not to use too little - Cold pressed Olive Oir or Rapeseed oils are best I read.

I use a pastry brush and brush the baking dish first. I then put in the parboiled potatoes and brush them. I turn them half way. I cook these in my halogen cooker till they are brown and crispy and melt in your mouth soft in the centre. I lived in France so only use cold pressed rapeseed oil and this is the way my French neighbours do them and their 'frites' are done the same way but cut into chip shapes. I much prefer rapeseed oil to olive oil.
