Gluten free cinnamon almond and raisin muffins...

β€’13 Replies

Hi everyone,

I made some of these this mornings as its that sort of weather when a nice cuppa and a home made cake go down a treat.

I made them with 55g ground almonds 165g GF self raising flour 165g organic butter 140g soft brown sugar butter 2 free range eggs mixed spice and a tea spoon of cinnamon whizzed up in my food processor put in a muffin tray with flaked almonds and golden linseeds on top, then baked for approx 15 mins 170C.

I soaked the raisins in boiling water and mixed spice so the are plumper and softer and don't sink so easily.

I hope that you enjoy your Sunday afternoon now folks. 😊

I bet the flavour of your muffins were good, especially as you soaked the fruit. Fruit cakes are also much better when you the fruit.

Enjoy the rest of them.

Enjoy the rest of your day.

Hey thanks Alicia and you're so right there about soaking the fruit first.

You enjoy the rest of your day too now. 😁

It's definitely the best thing to do and you can soak it in anything and then add even more flavour to whatever you are making.

Have a lovely evening.

Alicia :)
