I and my wife are permanent in search of new recipes and better food.
Our background: my wife suffers from histamine intolerance (HIT), sometimes she eats a little bit of meat. I`m a vegetarian since a long time and have a high blood pressure.
We like the mediterranean cuisine, therefor I do a large garden with vegetable and fruits. I`m curious, wether we can find some ideas in your chat.

My guess is that, with diligence, by removing dairy both you and your wife's problems can equally be slowly resolved. The mediterranean diet has been interpreted in many ways, one of which is to justify glugging down the oils. I subscribe to the school of thought that the mediterranean diet is healthy because it is high-carb and in spite of the oils in it.
If you follow my posts, a great winter meal is water, onions, garlic, red lentils, root veg, cruciferous veg and any herbs/spices to suit. Pile in those flavours. Use whatever veg you have to hand. Don't underestimate the amount of lentils. Keep on adding water as you add veg to ensure all ingredients are covered. When you taste it and think, I'll just have one more taste, that's when it has enough flavour! If it looks runny add some rice to turn it into a rissotto. Serve with a baked potato, side salad, bread etc. Make a large vat and chill/freeze in meal-sized containers what doesn't get eaten today for future meals.
Top tip: To be ultra-healthy and weight-concious, because your main meal is so tasty you won't need any butter on that potato!
In the likewise manner we do our cooking (mostly my wife does it, I can only heat the water). A problem is the storing of cooked food, it must immediately be frozen, because in warmish food fermentation and the generation of histamine is beginning.
A hint for all persons with HIT (histamine intolerance): Pulses (beans, peas, lentils) are often not good for persons with a lack of DAO (diaminoxidase). Very good informations brings the swiss organisation SIGHI. Their foodlist under mastzellaktivierung.info/do... is very informative.
