Here's a gluten free fruit cake I made and to up my plant intake I used cherries as I was low on currants I also added flaked almonds and chia seeds to top it.
I make it like a sponge with extra flour so instead of using 125g of flour use 175g which makes it denser so the fruit doesn't sink, I also soak fruit sometimes and that helps to stop it sinking.
I had a slice after walking 9407 steps and 4.5 miles in the forest this afternoon and enjoyed it with a nice cup of tea...π
