Hi everyone,

Here's what I had for lunch today, its 2 slices of home made gf bread toasted with home made fermented cashew cheese.

Here's the cheese when it had been fermenting all day and how I made it:

Because its fermented it has a really nice bite to it. 😊

That looks wonderful Jerry, I really miss bread - so I am glued to the screen right now πŸ˜€

Supermarket GF Bread is no substitute and that cashew cheese is also looking wonderful

Hey thanks on both counts Debs, πŸ˜€ if you don't want to make bread you can make flat breads with flour and water, here's a great recipe and using gram flour even better:

Brillant Jerry, Thank you. Where do you buy Gram Flour from these days? I can't find it anywhere. I used to get it all the time but its no longer on the shelves

Hi Debs, I buy Doves farm stoneground gram flour from my local health food shop and I believe the larger Sainsbury’s sell it.

Traditional pancakes using Gram flour are called socca in Europe. There are some tasty recipes on line.

Fermented foods are great fun to make. I often make yoghurt (so easy - everyone should try it!) and occasionally kimchi.

in reply to TheAwfulToad

I agree that yoghurt is easy to make, I've never had kimchi so will check it out as it sounds good.

Kimchi takes a bit of messing around, but it's well worth the effort. Vegan-compliant too (you'll see some recipes with fish sauce, but its not vital).
