Well even though its hot I've been having salads for lunch so I made this with some red quinoa, white onion, hot chilli, chestnut mushrooms with carrots peas and sprouts and I topped it with new potatoes and sliced sweet potatoes and sprinkled some ground almonds on top followed by flaked almonds and finished with a dusting of ginger and I baked for about 25 mins.
I enjoyed the flaked almonds on a savoury dish and will do this again, I like adding extra nutrients here and extra ones there as they all add up...
