Looks amazing - I’m going to try this although not sure gluten-free wrap will work as they often fall apart! 🙂

Just cook the wrap first under the grill for a few minutes before putting any toppings on it and that helps keep the wrap a bit more sturdy - might work then for the GF wraps ☺️
