I've been experimenting with making cream from nuts and made some sweet cashew cream the other day and today I made a savoury one. Almonds and cashew nuts are good for our hearts β€οΈ and I like that.
So I made the cream by soaking some cashews in enough boiling water to cover them for 2 hours then I drained them and whizzed them up in a blender with some coconut milk and thats it.
I gently cooked some red onion, hot chilli's, mushrooms, and baby plum toms + a pinch of ginger and then I just poured the cashew cream over it sprinkled some ground almonds and sesame seeds on to with some sliced red pepper and baked with some sweet and white potatoes and I steamed some baby carrots with purple broccoli stems too. (Sesame seeds are a good source of calcium as well as being crunchy)
