A quick question. I’m just looking at Made in India cookbook by Meera Sodha trying to find some inspiration.
I don’t know anything about rapeseed oil. I seem to remember reading here that olive oil, butter and coconut were best.
Do you think it’d be ok to replace with olive oil?

I use both olive oil and extra virgin olive oil in cooking regularly.

It very much depends on the temperature you are cooking at. Olive oil is better at low temperatures a it has a relatively low smoke point.
I would tend to using ghee for Indian cooking though.

Never cooked with ghee before. It’s only for cooking onions and such so I think it’ll work out. Ta muchly

Never cook with olive oil. When heated it is much more liable to smoke, an indication that it is going rancid.
