I made some biscuits with pureed dates and was really pleased, so I looked for some date sugar but they only had coconut sugar. Whats interesting about coconut sugar is it contains inulin which helps probiotics to grow and flourish, so yes its still a sweetener and with calories but its an interesting alternative. I used quinoa flour and plain GF flour with organic butter coconut sugar and free range eggs to help bind the biscuits and shortbread are my favourite biscuits.

Thanks Deb's and I feel for you over the tea as I had to avoid all hot drinks for several days last week as I had to have dental surgery and afterwards I said was 'when can I have a cup of tea'...😊
I baked them in a muffin tray as its quicker and easier and these are my favourite home made biscuits...😊
