When you're first diagnosed with a food intolerance all you see is food that you can not eat, then you start to look at all the foods that you can eat and from different cultures and then variations on a theme.
With mince pies you only get a small dollop of mince. So this is what I often make this time of year, I use 150g plain GF flour 60g butter and 30g sugar and for the mince I use one jar of good quality mince and 2 Bramley apples with some sultanas and some chia seeds as chia seeds with cooked fruit is really nice as it absorbs a lot of moisture so the fruit is more like a compote than just stewed fruit and chia seeds pack a nutritional punch, the crumble does not use much sugar and I always use brown sugar.
I'd either have it with live yoghurt or cream and today its coconut cream. For those of you who want to make a simple GF flour mix rice flour and tapioca starch make a good combo. And you want to use 20-25% tapioca starch to rice flour. This mix is also really good for GF biscuits etc as you usually use eggs.
