Hi everyone, well this is what I cooked for tea tonight.
I often make fruit crumbles and sometimes savoury ones and today I made a savoury one but with a falafel crust and for a first attempt l'm really pleased.
I make a savoury crumble as its so quick and easy compared to gluten free pastry, the only disadvantage is you need more gravy...
Because I used a falafel mix it is also vegan so its nice to have a recipe for our vegan friends/members.
For the veg I chopped leek, sliced mushroom, chopped green beans a tin of tomatoes, I bought the veg from my local shop earlier and chose the nicest looking.
For the crust top:
1 sliced 1 red onion, chopped garlic, coriander, cumin, turmeric, fresh coriander and a tin of chick peas and 1 1/2 spoons of ground flaxseed and a little olive oil whizzed it up and spread it on top of the veg and baked for 35mins
And just for a change I popped some white and sweet potatoes in the oven and had them roasted with it. 🍠

Tonight I had something quite different to normal, and I didn't take a photo - but it was wholemeal tortilla wraps and I put some smoked salmon and scrambled egg inside - and had 2 wraps. I've never done that before, but I had some smoked salmon that needed using up, and so I was trying to be inventive regarding ways to do that, and also I 'fancied' that kind of food.
My son & vegan friends are going to be ecstatic over that idea! Hope you don't mind if I pass it on?
I made humungous quantities of falafels for my 50th birthday party. I tried a few different recipes, & variations from one I'd been given by a falafel stall owner. They were easy to make with a food processor. I gave the fryer away afterwards, so as not to lead me into temptation.

Thank you Jerry and I will have a look at the link, I love vegetarian food. The only meat I eat is chicken and I am seriously thinking of going back to be a veggie.
Also, on a different note, have you experienced any problems with Health Unlocked today? I wasn't able to answer you initially and had to go into the main log in page, log in, find your article on the list, click on that and I was then able to reply. What I normally do is click on any replies from my emails and get in that way which is so much quicker.
Ooh, I recently stopped eating meat although I still eat fish (pescatarian). I'm also wheat and lactose intolerant. I'm always on the look out for new recipes but I hadn't thought of using falafel as a topping. I'm definitely going to have to try it. It would probably go nicely on top of a ratatouille style filling with aubergine, onion, garlic, mushrooms, courgette and tomatoes. Thank you for the recipe and the inspiration.
