Hello everyone, here's a crumble I made yesterday with 1/3 quinoa flour, 1/3 ground flaxseed and 1/3 gf plain flour.
The texture of this crumble reminds me of something wholesome that I used to eat before being diagnosed with coeliac.
I put some chia seeds in with the apples and sultanas and because chia seeds absorb 10x their volume in moisture the fruit is like a compote.
When you make a crumble you want flour, fat and sugar and you use Half fat to flour and half sugar to fat.
4 med Bramley apples, 25g chia seeds, 100g sultanas and 1 heaped tea spoon cinnamon (sweetened to taste)
For the topping:
I used 150g flour
75g butter
35g brown sugar
Whiz all ingredients up thoroughly and spread on top of the fruit.
I have had 2 portions one with live yoghurt and one with single cream...π
