Last night I went to NAndo's and indulged a little too much after a sensible meal by having a Mars bar - silly, really, after avoiding the minefield that was the NAndo's menu!! Anyway, to make amends, I decided to limit my calorie intake to 1200 today - meaning 400 per meal with no frills in between. That said, I am on HOLIDAY! WTF?! 400 calories!!!! 😒
On comes my thinking cap and I decided to go for a Ratatouille lasagne I saw once on Eat Well for Less:
2 sheets lasagne (6"X3")- 135 kcal
50 g courgette - 8kcal
40g onion 10 kcal
40g sweet pepper - 10 kcal
30 g mushroom- 6kcal
1 TSP oil - 34kcal
50 g leeks - 30 kcal
20 g reduced fat cheese - 65kcal
75 g cottage cheese -46kcal
220g tinned chopped tomatoes - 46kcal
2tsp tomato puree- 16kcal
Method:
Soften the leeks on the heated oil. Add the rest of the ingredients and cook on medium heat for 10 mins.
Place half of the cooked ingredients into the lasagne dish (I used a single portion fish). Place lasagne sheet, then half of the cottage cheese. Repeat the layering and top off with the reduced fat cheese.
Bake in the oven on gas mark 5 for about 30 minutes. Enjoy ( but do wait for it to cool...I learnt that the hard way, lol)
350 kcal...just right for a holiday lunch, I'd say!
