I’m sorry if this post exists, I’m using the app and I can’t search through the history.
I’d like to have vegetarian lunches, which are nutritious and easy to make. The only issue is, I don’t like avocados, eggs, mushrooms or quorn (and similar products). I’m really struggling for good sandwich fillers or salad toppers.
If you have any ideas I’m all ears.

Hi, you may like tahini paste and salad sandwiches, mashed chickpeas with lemon and black pepper with mayonnaise and salad. Taste vaguely like tuna. Bought roasted red peppers on a salad with olives and cornichon. Roasted vegetable and cous cous/pearl barley or quinoa salad with a lemon and tahini dressing. Quiche.

For a late lunch I have just had a bowl of four large carrots cut into chips and airfried with garlic powder, black pepper, onion powder. I was thinking of taking a photo, but they didn't last. Nice looking bowl is still there though.
