Healthy soups
I make a lot of soup, but not often to a recipe. I find sweet potato goes very well with veg like cauliflower or broccoli. I cook all the veg in a steamer, then fry a couple of cloves of garlic on a very low heat in a biggish saucepan (it burns easily) in a 5 ml spoon (like a kids medicine spoon) of olive oil only for about a minute, add the veg, then use the stock from the steamer and a hand held blender to make the soup as thick or thin as I want. there's a lot of variations on this theme - you can leave out the olive oil for less calories but then you miss out on healthy fats and taste. You can add a can of drained beans (like butter or canellini beans) for more substance and protein. If you dont have a steamer you can cook it all in a saucepan with some stock (I look for low salt without artificial additives like Kallo). If you want a creamy soup you can use milk or soya milk instead of stock what I like about making soup is there are infinite ways to experiment, but if you make a great one don't forget to write it down so you can do it again!
Leek and potato. Chop onions and leeks, dry fry in a pan for a couple of mins. Add chopped spuds, skins on for fibre then add s&p and stock. Simmer approx 20 mins then blend. Keeps for a few days in the fridge and can be frozen.
i love my soup i have it every day i put lentils grated 3 carrots sliced 2 potatoes 2 leeks a stock rosemary corrindar let it cook 2o minutes then i tryed putting tin golden veg tin of weight watches soup 57 calories it makes a huge pan if i want to think it i usually put tomato puree
Carrot and lentil soup: 500g carrots, 200g lentils 1 litre of vegetable stock and ground coriander and turmeric (1tsp each) boil until carrots are soft and blend until smooth. Yummy and hardly any calories
