I am having problems opening my mouth... It's okay for talking, but my jaw is so stiff to open and/or get moving if I have to eat.
Is this just the same as it taking a bit of effort to "get going" generally?

Could be TMJ (temporo mandibular jont) - see a specialist dentist - or it could be myofascial pain syndrome - a TMJ dentist can probabl diagnose that too.

I also have that problem from time to time. (And for most around me it certainly is a blessing!!)
I have found that mine's from the jaw muscles going into a spasm of sorts. It helps to losten up the muscles by moving my jaw side to side as often as I can manage- my jaw gets tired while eating, so I try to eat especially soft foods. And the thing that helps the most (but it hurts like hell) is to use my knuckles to massage the knot out of the muscle. Takes a lot of pressure to get it out (which kills my hands and arms) but that's what works for me.
The longer you leave it the tighter it gets, so keep trying until you find something that works for you.

Your dentist would help you with this. To start with, you get some easy exercises to loosen up the jaw, but there are other treatments, depending on the cause and severity of the problem.

also have a similar problem, I have some exercises from the dentist which do help but you have to remember to keep doing them
