What do you have with them? It is common with Fibro to also have IBS, and with IBS, it is common to struggle with any foods that are difficult to digest, including dairy products and high fat foods. You may also have a wheat or gluten intolerance, or a problem with sugar, but if not, cutting dairy out of your pancakes and having a low-fat filling (lemon & sugar? Or applesauce?) might make them more IBS friendly. :)

I can't eat them unfortunately. Have more food intolerances than you could shake a stick at, but my son loves them stuffed with cheese. I have received orders to make them for his meal when he gets home from work this evening, so I am off to practice tossing them now. I hope he won't mind having them scraped off the ceiling and floor

I make some little fluffy pancakes ( I believe the Americans call them 'hot cakes' which I find less greasy and a bit more digestible. You don't have to toss them either - should that be a problem!

Recipe:

1 cup flour

1 cup milk

1 egg

2 tbs sugar (optional

Beat all together well, then drop spoonfuls into a little hot oil on a moderate heat.

When they go golden brown at the edges, and bubbly on top, flip them over with a palette knife, and brown the other side.

Serve with fruit, yogurt, lemon, sugar - whatever floats your boat - they are scrumptious!

Love Moffy x

Feeling a little bit calmer thanks. Been to the CAB today and have an appointment with them for next week to help me with my ESA appeal letter. Now if I can just sleep tonight without more nightmares about tribunals... sigh
