Hi Karen how are you doing. I gave up all wheat products in January so that 6 weeks now. No problems I have change completely to LC HF it suits my lymphodema well and I can honestly say I feel better

I know I need to do it again, stuck at it for 2+ years once but although it helped never a complete "cure" and I missed being able to go out and socialise, buy a meal that someone else cooked.
My friend who has to be gluten free because of coeliac disease says that restaurants in England seem to be more aware of it now and are putting a few more choices on their menus. The thing they can't seem to get their head around is gravy so she often has to take her own! I tried it for a bit but found I rarely enjoyed the food and as life is miserable enough as it is decided to go back to food I at least enjoyed.x

My friend found that she was no longer having the trots and stomach pains when she eat things like bread which she has always adored. Also since she has been diagnosed with coeliac disease the GP and specialist keep a check on her health and she has a bone scan each year to make sure that she is getting enough calcium in her diet and she has also been given calcium supplements. She looks much healthier and has put on weight as before she was put on the gluten free diet she had lost 2 stone.x
i lost weight but was also cut out food that you could not eat raw (potatoes and beans) dairy and sugar as well. it did not lessen my pain levels and really considering I lost weight did not give me more energy just made shopping easier. Bought lots of clothes that I still did not have the energy to go out in so pointless in buying.

I just looked at the picture of the pancakes and I did not like the look of them, sorry! I am not sure that I could do what you are doing? It sounds too difficult for my lack of will power?

I was mostly gluten free for several years, but with my IBS, I have finally given up all wheat. Be careful with whatever you buy, since it may have wheat hidden in the ingredients. There are a lot of rice products that can help with the coping. I like rice bread toasted with cashew butter, yumm.
I will say that it is hard to find a good gluten free brownie. Like you said, some gluten free recipes use a lot more fat than regular ones. But I just found a box brownie mix that only calls for 1/4 cup of oil.
It is hard to do without the gluten. Do you have the snap pea or lentil crisps? Blue Diamond here makes some really good almond and rice crackers. Cashew and other nut flours can be used to make some sauces and to thicken soups and creams but IDK if it would mix with meat broths to make gravy.
I wish you the best finding a way to give up gluten. I think it is more than just something we like. I think it may be addicting, lol.
Karen, can you post some recipes on your blog? Some of those look pretty darn good. Lemon Cheesecake sounds excellent.
