CGM experiment and inexplicable spikes

I recently got Buzud CGM, a local brand (Singapore) couple of weeks ago to monitor what causes spikes because my endo specialist said my recent A1C was not good (was in 9 after being in 6-7 range for a while). He prescribed Dimicron before meals ( in addition to Janumet post meal). I started IF. I noticed Dimicron was causing low levels sometimes down 3.3 and 2.2 mmoL which was translating to 4 and 3.2 on finger test. so doc said to go off pre meal tablet and monitor. Meanwhile the CGM was getting to be super inaccurate with wild swings off fingers test, so had that changed and it's been ok so far.

But sugar spiked a bit much today after tracking in the range of 7-8 this morning, on empty stomach (all I had for dinner was two dark rye slice toasted and bowl of lettuce tomato salad before that). After a jowar-beet pasta with tomato sauce lunch it went to 11 on finger test ( CGM shows 19 so I'm not using that as a guide now). I checked the GI and GL of the pasta it's not high. I also had avacado and apple cider before meals.

Anyone else experiencing unexpected spikes after a normal meal? Any idea why?

it appears to me that it was a very big carb load, that you consumed that generated the spike. I came across a plate eating hack which actually works pretty well. The sequence to consume your plate - Vegetables first, protein next and carbs last.
