While cooking rice we put one teaspoon of salt to kill the sugars in the RICE. Can this RICE be part of LCHF diet?

What is the Joke be serious Sir.

How did you conclude that salt kills sugar? This is absolutely new. Pls elaborate. Sona Masuri rice has a very low glycemic Index. When you buy it parboiled most of the nutrition is retained.Cook it in about 20% extra water and immediately strain after cooking. Strain and THROW away the water or let yr wife use it as a starch for her cottons. If you are from a rich family or Nawaab by attitude use Basmati but soak in plenty water, throw away the water, then again cook with extra water, and discard the excess water imdtly after cooking. 100 gm carbohydrates are a lot. Live well and enjoy life just remember do not be greedy. Live to eat another day and carry on. If you are not enjoying yr life you are screwing up yr pancreas even more.

I eat 150 g rice (weight of cooked rice). This is double boiled red rice (Palakkadan matta) cooked and drained. How much carb does this contain ?

Thanks medfree. But 15 g of uncooked rice is 9 g only. Anyway I never exceed 150 g of cooked rice for lunch. That is 40 g. This leaves me another 60 g of carb for breakfast and dinner. Right ?

You mean to say carb deficient ? I do take protein and fat apart from these carbs.

Anil there is hardly any difference in GI of all varieties of Indian Rice. If we take unpolished one we will get valuable vitamins and mineral in addition to carbs and protein. In the case of polished rice it will lack except carbs and protein.

Sir, As you stick to 100 gms of Carb a day, I think this is more than sufficient to control your BS level. Then what is the need/role of High fat in your diet? Please explain.

I eat 3 times rice. I cannot live without rice. I never go for walking. My work is basically through mobile and internet. I am 51 years old. I do not have sugar; All other parameters are under control. I never take any medicine. I have not got Cold and Fever for past 4 years.

Please do not blame for anything the RICE; When we do not exactly know cause of Diabetes, let us not name rice as dog and hang it.

Salt is added to rice when cooking just to enhance its taste and not at all to kill sugar. This is a new theory that has come up.

I take rice once a day. Just pour out the boiling water two or three times and thus reduce the starch. And then take a measured quantity.

Yes I am a diabetic. I take insulin 30:70 10 units before lunch. I may have to change that to 12 units. Morning I take Cetaphin 500, sustained R. Yesterday my sugar reading after 2 hours was 163. However it sometimes goes to 210 if I take too much of curry. My last HBa1c was 7. That is high and I have achieved 6.2 in the past.

One can take a small quantity of Rice after pouring out the boiling water twice or more. Much of the starch is reduced. Or one can take 2 Chapatis without oil. 3 may be Ok for some.

More important than 110 or 120 minutes is the HBa1c according to Dr. Gary Scheiner.

In his book "Think like a pancreas" Dr. Gary Scheiner explains how one can reduce chances of complications.

Samba(wheat) rice and Samba Rava are an option. The taste with some Low Carb high fat mix can improve.
