So I completed w6r3 struggles but did it, unfortunately health issues meant not able to go out since then. It’s now been 3 weeks. So do I carry on with week 7 or go back to the start and build back up again. Any help appreciated 😀

As stated in the guide to the plan, healthunlocked.com/couchto5... you lose no significant condition in the first two weeks of non running.
After that loss of condition is gradual.
All any of us can do after a lay off is to go out and see what we can comfortably manage, then build back up gently, using C25k or something similar as a guide to weekly increase.

I had 16 days off after injury and then picked up where I left off.
All you can do is give it a go and see.
