I’ve completed week 3 (yay) but because of other commitments I’ve ended up having 2 days off between each run. I even did a 4th week 3 run because I’m worried that I’m not completing the programme the way it’s meant to be.
Will it make a difference? Do others have bigger gaps between runs? Grateful for any advice. TIA

I don't think it makes a difference. I have 2 rest days off each week. I'm an early morning runner and I missed my scheduled run this morning. If I don't run later on, today will be my second rest day after completing Week 3 Run 2 on Friday. For me the main thing is to complete each run and avoid injury.
I run every tue, thur and sat morning so I have two rest days after my sat run. I’m on week 8 now and haven’t needed to repeat any runs. No injuries or issues so far. The important thing is to have at least one rest day between runs which you are doing. Keep going!
Three sessions per week is probably optimal to keep your body adapting and developing but we are all different and if you need two rest days between runs then that is just fine.
Repeating runs is also absolutely fine, but keeping up momentum is also crucial. We have had people give up in the past because they felt they were not making enough progress.
