I’m on week 2 run 2 but I have not been taking a day between each run! I feel keen to run daily and having built my fitness up over the last 4 months I felt this was ok but maybe I’m wrong???

You are wrong!!!! The rest days are vital - when we run we cause micro tears to our muscles, and these are repaired on rest days - most importantly it’s when you build muscle (and bone cells & micro capillaries etc). AND you are putting yourself at risk of injury and no running at all.
You can do other exercise - but follow the plan it works - and it says take a rest day!
Thanks for the advice!
Came in Strong as I’ve read far too many ‘...and now I can’t run for 8 weeks’ posts. This is about getting fit not injured! And it’s best to look at this as learning to run for 30 minutes - pace and distance can follow! Good luck!

Rest days are so important so if you do not want an injury that could put you out of running maybe altogether you have to stick to the c25k plan 😊
