...we were on about foods which may or may not make us run better, and beetroot was mentioned

I was making veg crisps this afternoon, from a selection, picked from my garden. Parsnip, carrot, celeriac, courgette, beetroot, and a shop bought sweet potato

Lots of lovely beetroot varieties. Mmmmmm. No after pictures as my husband demolished them!

Courgette crisps are my absolute favourite, but I bet the beetroot crisps were beautiful.

Yum Yum Yum! No wonder he demolished them. They look like edible flowers. Hmm ... you can eat nasturtiums, I suppose you know? In summer you'd be able to mix petals among all the colourful fruits.

For some reason I now have a memory of being on the river of the town I grew up in, and coming across masses of flowers floating along downstream. There was a Hindu temple a bit further upstream, and there had been offerings made. (Normally what you'd find floating in the river would be litter, dead things, or "bum sausages", so the flowers made it into something new).

They're the same colour as my face on hard runs! They look fab missw, you should package them and sell them. You'd make a fortune!

MMM!! Beetroot!!! Boiled, baked, pickled !!

A PROPER Australian hamburger will ALWAYS have beetroot in it!!! Sometimes even pineapple!!

I agree, I dont mind calling myself beetroot faced if they have the ability to look that pretty. I bet they tasted good.

I'll never forget how excited the kids got the first time we made our own crisps. It's always better to prepare your own food.

I've never tried courgette crisps though. You've inspired me to try with my Dad's allotment batch :) thanks

Ooo we grew that lovely pink and white beetroot this year- its delish, nicer than the normal stuff and less messy. Haven't tried making crisps with it yet, but suspect I will this weekend. Thanks for the idea xx

The parsnip chips were my faves. The sweet potato ones cooked way faster than I expected so some of those got charred.

Yep, allow plenty of time and clear the decks. It can get messy! Fun though but I did inevitably cut my finger on the dreaded mandolin. Bah! You dry the sliced veggies on kitchen paper and press another paper towel over the top so they are as dry as possible before you start trying to crisp them up. Watch em like a hawk once they're in the oven!
