I am currently doing a comfortable 5k and two shorter runs a week. I know that starting out, emphasis was put on rest days in between run days. Should I still be having regular rest days now that I have been used to running for a while, or would it be ok to run on consecutive days?
With work, weather and hours of daylight, I am finding it more difficult to run as often as I would like to. What is the general consensus on this I wonder?

One thing to ask yourself is *why* which may be a useful pointer to whether you are risking being a *bit* of a gungho eejit who is more in need of yoga or some form of mind calming fitness (mental fitness) practice than a running streak. In which case (because such folk have at a rough guess only a 25% chance of taking that on board) it might be better to focus on a running supportive activity.
It sounds from your post as though it is more a question of wanting to ensure you get three runs in during a week despite the inevitable obstacles in life ie will the world end if some weeks you run two days in a row. In which case it is probably more of a matter of not running hard both days and staying on softer surfaces.
