A few months ago, I went for the DWP work assessment, I am now going forward to a tribunal, BUT in the last week, I have gone through a change of circumstance, my giirlfriend/partner,, is living with me now, this has made us make a joint UC "thing", and now all my previous, journal entries,, payment history... just disappear. I understand that, we are now classed as a couple, my question is, given this, is my previous assessment, as a single claimant, and now the tribunal (which I have not got a date for yet) just banished, and will have to go for a new one?

No definitely not as it’s a totally separate issue to your current living status. Keep all your letters ect that you were sent from the beginning of the appeal & personally I’d carry on keeping all correspondence. I’d also advice you to get intouch with your local citizens advice.
