Hello, thought to share some of my GF recipes that Iβve made up and found inspiration along the way to support changes to my diet.
Oat banana muffin (GF) I made yesterday and vegan & GF pancakes. Normally I made them thicker but this time just standard. If you want thicker (American style) can be achieved using thick paste.
I added half a small banana, vanilla, flaxseed, ginger and cinnamon grounds, coconut milk with 1 egg and 2-3 large table spoons of lactose free Greek yogurt along with cup of rolled oats for the muffins - also added some buckwheat flour to thicken the paste.
To make pancakes, just add half a cup of quinoa and half a cup of buckwheat flour along with cinnamon and ginger ground powder, some golden syrup and also added cup of coconut milk (or half of filtered water)
Added coconut yogurt and organic peanut butter on the side.
Suffer with reflux symptoms so kind of helps with eating natural sugar diet.
