The shops are full of pumpkins being sold off cheap after halloween, and I know they are a healthy addition to our weight-loss efforts, along with all of the other colourful squashes around at the moment.

A always love a dessert and Pumpkin Pie is traditionally high in sugar and fat in the pastry base, so have adapted the recipe by swapping the sugar for one very ripe banana and a drizzle of honey added to the pureed pumpkin and spices. I baked it on a base made from ...wait for it...Allbran cereal!

I peeled and deseeded the pumpkin, chopped the flesh and cooked on the hob until soft. I soaked a mugful of Allbran in some milk and an egg, added some Ginger spice for flavour (no sugar) and pressed it over the base of the dish before pouring on the mix of pureed pumpkin, egg, milk, nutmeg, cinnamon and banana. The whole lot then was baked in the oven for 35 mins or so, and left to cool. Sprinkle the top with a mix of cinnamon and a little icing sugar, and to add flavour, I served it with some passion fruit coulis I happened to have in the fridge. A much healthier option, and tasted not bad at all!

Hi DartmoorDumpling,

Wow, thanks for sharing this healthy dessert idea, and I am going to make a note of this recipe for future reference. I've not bought a pumpkin this year, but maybe in future years I will - and it looks such a tasty dessert.

This does sound interesting. My partner and my daughter picked up a couple on Wednesday on their travels. Daughter made a great spicy pumpkin soup...lovely and warming it was too... When I was in Canada last year for my 50th we ventured into a McDonald's as I was excited to see that they were advertising a limited edition pumpkin latte for Halloween...it was vile and nauseating, never again lol.

You have been rather busy this weekend, DD. Still, I'm sure your time and effort in the kitchen has been worth it.

Great idea using All Bran as the base; I bet it provided nice texture and crunch once cooked.

The base actually goes soft - but looks like a sponge even if it tastes more like....well, Allbran! It might have benefited from some mixed spice rather than ginger...? Sometimes we just have to kid ourselves that we are eating those foods we miss, and it does have some beneficial side effects!

I see. So long as it's not soggy, since few things are worse than a soggy bottom. Mixed spice would no doubt increase the taste experience.

Mixed spice or not, I'm sure it tasted much better than anything you'd buy in a shop.
