Cheesy nut roast.

Here is my favourite nut roast recipe.

I substituted the dairy for non dairy and used an American cup dry red lentils (cooked in veg stock until soft) instead of the beans. I suppose this makes about 2 tins of pre cooked lentils. Also I used broken mixed nuts , which were on sale in the health shop. I like the variety in texture and flavour over just one nutty type!

I have started using a shallow square brownie tin to cook it ( with a square of tin foil on the top to stop it burning. It makes for a crisper roast.

I wanted a cream cheesy melt. So I added large dollops of veggie cream cheese in little wells in the mixture

Thanks for sharing, sounds great! I experimented with nuts today too - made roasted hazelnut butter (delicious but such a tiny amount from all those nuts!) and walnut choco energy balls. Will you freeze your leftovers or use them over the next couple of days? :)

I haven't tried freezing it, it seems to last 4 or 5 days in the fridge with a cover on it. I heat a portion in in the microwave with a table spoon of water to keep it moist.

Hazelnut butter sounds lovely and walnut energy bars also. I've never tried HM energy bars, are they quite easy?

I think I tried to make almond butter once and it nearly broke my blender. It was SO dense!

Sounds great, my partner bought loads of nuts (in shells) for Christmas so I might try making a nut roast if there's enough left.

The energy balls were more fiddly that I expected but easy really - just chuck the nuts, dates and anything else in, blend, scoop and pat into balls (very crumbly mixture but stayed put once squeezed into shape!) I blitzed it too much so then added a few more nuts for texture. I read that you need a powerful processor for nut butters (mine was very dry so I cheated and added a drop of water!) :)

Thank you for the energy ball recipe. I am going to try them. Certainly giving up on nut butter- took risky! I would be lost without my blender. Hope you enjoy the nut roast.
