Here is a photo of my breakfast, as a few people have enquired after it recently.
I put 500g full fat Greek yogurt in a kilner jar and stir in a dsp of crunchy peanut butter. If the yogurt is rather sharp tasting, drizzle some honey in, too, although that obviously adds to the carbs. It lasts about 3 mornings.
I eat it with chopped strawberries and toasted nuts and seeds. This morning there's macadamia, pecan and pine nuts plus pumpkin and sunflower seeds. I spread them out on a baking tray and toast them lightly under the grill for a few minutes. Once I hear the seeds starting to pop in the heat, I take them out and cool them before storing in a jar. (The toasted nuts and seeds are also nice sprinkled over a salad.)
