Inspired by Tubby's description of her frittata as being a rainbow one, I decided to have a go.
In a deep frying pan, I lightly fried chopped/sliced red and orange peppers, courgette, 5 asparagus spears, a leek, a few mushrooms. I whisked 4 eggs and stirred in a handful of Cheddar and poured it over the veg. Once the base started to look done, I finished it off under the grill and scattered fresh parsley over the top. Took about 15 mins.
