Thanks to blindinglights and to IndigoBlue61 who I feel is also a collaborator, this is the first meal from my pantry challenge, to inspire each other to get creative with the food we have to hand.
Blindinglights was totally my inspiration (I kept going back to her recipe to confirm) but I made a lot of tweaks to it, based on my taste and my cupboards.
Changes:
* mashed miso paste with butter, pepper, chilli and vinegar - from New York Times cooking pages.
* massaged that mix into the chicken a few hours before cooking to let flavours penetrate
* after browning, moved chicken pan to oven as miso was burning.
* wild mushroom mix was too amazing, so kept it separate to savour and made a butter/soy sauce emulsion.
* included zoodles in the veg
* cooked egg along side veggies.
* no rice!
That seems like a lot of changes, but it was pretty much blindinglights' construction.
Summary: it was lush!
