Recipe: Prawn cocktail for the 21st century

50g prawns

Tbsp mayonnaise

Red pepper flakes, fresh chopped chillis, chilli powder or hot sauce

Torn coriander or other fresh herb for garnish (optional)

If prawns are raw, frozen or if you just want a little more flavour, toss them in a hot pan with a small amount of oil to warm/cook and brown them.

Cut avocado in half, remove the pip. Carefully remove skin or scoop out with a spoon, keeping the flesh intact. Thinly slice each half, and fan them onto a plate.

Scatter prawns onto the avocado, dollop of mayonnaise on top, sprinkle with chilli and finally garnish with herb, if you have it.

About 400kcal and <3g carbs, so a light but filling main course or share between two people as a starter.

That looks yummy! I've just had avocado and prawns for dinner but a bit boring compared to yours 😊

I think the chilli makes all the difference. Looks bright on the plate and on the palate.

I think the dried chilli flakes are the best option. They look so bright and hit the taste buds hard. Even better than fresh chilli.

You could even add ginger, garlic and/or chilli to the oil, for more flavour.

Well, you could and it would be delicious, but sadly far off my eating plan.

I think sweet chilli sauce might be the thing I miss most being low carb.
