I've cooked celeriac for the first time today (and thank you for asking, it's only a little cut and it's nearly stopped bleeding!) so I googled recipes and found this.
I love recipes that are naturally low carb. This might need some tweaking, but it looks beautiful and delicious.
Cutting celeriac wafer thin is a skill I haven't quite mastered, though I did try. I managed to make a few sheets, which I microwaved; that's not the way to cook it! I didn't make this dish today, because I had other plans for the celeriac, but I will make a variation of it some time in the near future.

OK, had the last of the mash for lunch (with cream, butter, salt pepper) as a bed for meat balls.
It tastes a bit like parsnips. It makes a good mash, though not completely smooth. I used a food processor; I think it would be hard work to mash by hand.
I was in Waitrose the day before the lockdown started. I wanted to buy some veg, but the shelves were bare. Headed to the freezer section and it was similarly stripped. The only things on the veg cabinet was Yorkshire pudding (?!) and one bag of this waitrose.com/ecom/products/...
It's quite cheap, and easy to prepare. That was my first taste of it.
