First time tofu

So I just made a stir fry with tofu! First time having tofu, just took my first bit and love it! Wish I had tried it sooner haha. It's a little weird, I expected it to be a little chewy for some reason but it's just soft and melts in the mouth. I used:

1/2 pack (150g) of Waitrose Superbright Stir Fry Mix

50g of Ocado Sliced Mixed Peppers

1 packet (150g) of Amoy Medium Noodles

1/2 pack (100g) of Dragonfly Marinated Tofu

Splashes of Amoy Light Soy Sauce

In the future how do I "measure" sauces? Same goes for butter?

I’m so glad you tried tofu. It will take some experimentation but as it is fairly bland it does well with being marinated in spicy sauces. There are a couple of ways to measure sauces: one is not to bother at all unless you find that weight loss is stalling and you need to cut back, another is to estimate an amount so if you’re heavy handed, call it 1tbsp (15ml), if a small splash, call it 1tsp (5ml) 😊

Well the one I used for the stirfry is pre-marinated but I also have 2 boxes of plain so could try my own thing with that. I assume you can just mix it with any sort of sauce or spice mix? Could I make it Nando-y? Yeah for now I'm not really bothering with measuring the sauce, I doubt it's much anyway. I think for me, I need to work more on portion sizes and having more fruit and veg. :)

I’m afraid I don’t know what Nando-y is but any flavours/sauces/spices are fine. You can also put it in soup. I use it with miso paste, spring onions, mushrooms and other sautéed veg for a Japanese-style broth too. Have fun trying it out.

Hiya.

If you liked tofu, try another soya product called tempeh which is v high protein. I marinade mine in oil, tamari, ginger, garlic then roast for 20mins

Is that the Tofoo product? Might give it a go in the future. Got a lot of learning to do when it comes to cooking!

My favourite brand is tofoo. I get the smoked variety and use it for all sorts of things. You can change the texture a number of ways too. The easiest is to slow cook it on a low heat. I will usually do it ahead of time and then let it cool before adding it. That's how you can get a more 'chewy' texture if you fancy it. It's yummy!

Yeah when I searched for tofu on Ocado there were so many brands, I wasn't sure which one to try. Ended up with Dragonfly, not sure why, but seems fine. I'll look more into tofu in a bit and see what other flavours there are. I have a slow cooker, my mum got me one years back but it hasn't been out of the box lol. Always wanted to try it but not really sure what kind of things to make that isn't just soup or something lol

Oh, that reminds me there's tofu in my freezer somewhere 😋

I buy un-marinated tofu. If you freeze it or press it, it drives some moisture out; then you marinated it and it absorbs much more of the flavour.

Haha I wonder what you'll be having soon ;) I ordered 2x original tofu and 2x marinated tofu which I'm storing in my fridge. Is it better to store in freezer?

It will last longer in the freezer, but it usually has a long shelf life, so that's probably not necessary.

The other reason to freeze it is to drive some moisture out. If you do that, it will absorb more of the marinade or cooking liquid you use, so be tastier. You can also drive water out by pressing it. Just put it on a plate, put another plate on top and pile on some cans or other weight. In a couple of hours you will find you can pour off quite a bit of water.

If you like things a bit more crunchy, I crisp my marinated tofu up in the oven but you can fry it if you prefer 👍

Ohhh I might try that! I would prefer slightly crunchy as I'm still finding the texture a bit weird, yum though!

Yes, crispy is good 🙂 Also, you can put it on skewers and put sauces on them before cooking. I prefer not to freeze mine unless it's going to go off soon.
