Thought this was definitely worth the share as it so healthy, easy to cook and tasty.
It's surprisingly flavourful and of course the rice can be switched out for another side and the yoghurt can be removed.

That does look good 👍. I do a similar recipe but use green Thai curry paste and green vegetables

I tried a vegetable red Thai curry last week but the paste was 🥵🥵🥵
I might give it another try with a different brand of paste.
Green is much milder 😊. I also go easy with it, half a jar at most to a full tin of coconut milk for four people
I love green, it's the first time I've tried red. I only used about 2 table spoons as well, if that. I think it was just that particular brand. The flavour was delicious just far, far too hot so think I'll have another go of the red with a different brand of paste 😏

Or maybe only use one tablespoon? I’m a real lightweight when it comes to spice 😩😱😂
