I don't eat wheat, but then I'm not a vegan. A plant based diet allows bread, but it needs to be good bread without lots of additives, you'd just need to steer clear of processed foods, like cakes and biscuits. I don't find carbs fill me up, it's fat and protein that does that, but I think a plant based diet restricts fats and you'd need to eat pulses for your protein.

I know vegan allows it but I put on weight with Bread
Just cut out the bread then and replace with lots more veg. After a few days, you won't even miss it

I have been dairy free for years, just cheat now and then as I love cheese but cheese don't like me
I studied nutrition I know the why's but but but I am addicted to bread...Cheap, wholemeal, brown, rye, white, bread I have no problem keeping away from, I only like the good for you stuff, but like it too much.

Weight loss is not all about motivation and masochism - if you "slim smart" it is not so hard! Eating plenty of fat reduces the "need" for carbs and snacks.
Many of us here find that what works is a combination of The Low Carbohydrate, High-Fat (LCHF) diet (see the forum here on Health Unlocked) and Not Snacking All Day AKA Intermittent Fasting (IF). See:
Trying to enjoy a weight-losing diet without eating meat or fish... You clearly like a challenge! Just learn about the carb content of your favourite foods and avoid anything with more than 10-15% 'total carb'. You will lose weight.
