Seems like you know where things fall apart so maybe have a plan for that. You could set yourself mini-challenges like trying two new recipes a week or one new veg, cooked three ways - something to keep your interest up and explore the possibilities of all the wonderful food available to us. You could also come here every day and get a buzz from talking to others on the same journey

Weight lost slowly is easier to keep off.
If you lose weight slowly, there is not a major transition to maintenance, so it makes maintaining easier.
Counting calories is a bore - it can help for a start, but most people put on weight when they stop.
Weight loss is not all about motivation and masochism - if you "slim smart" it is not so hard!
Many of us here find that what works is a combination of The Low Carbohydrate, High-Fat (LCHF) diet (see the forum here on Health Unlocked) and Not Snacking All Day AKA Intermittent Fasting (IF). See:
You have to think of this a a change of lifestyle, one that you can live with forever; if it is just your normal routine you won’t ‘lose interest’. Admittedly it takes some discipline to start with but you soon get used to it, especially if you don’t make it too restrictive. Good luck and hope it works for you this time x
