Being a student means that I don't have a tonne of money to go out and spend on really healthy foods. I have been on a diet of a simple porridge for breakfast, a sandwich and crisps for lunch and Chicken, rice and two vegetable for the majority of the year which has gotten rather boring! Any suggestions for meals I could make that are healthy and affordable?

Hello Hun, foods that can be made in bulk. Recipes like cowboy beans can be frozen then ate with a variety of other things, jacket potato, on toasted thin seeded bagel with poached egg etc. There are also recipes for low budget but healthy online. I have the cowboy beans one if you wish . 😊
Do your shopping at the end of the day when there are reductions, if you can. Morrison's has "Wonky" fruit and veg at great prices, and I'm sure the other supermarkets do too. You can buy quite a lot of tinned and fresh stuff at those low price stores with Quality or Bargain Or Saver in their names
I’m unemployed so I buy all my food from Aldi, also use the super 6 fruit and veg for inspiration to try cooking different things. The One Pound Meals by Miguel Barclay gave me some ideas, if you don’t want to buy his books, his Instagram account @onepoundmeals has some great ideas for free.
Hi, take a look at my cousin's blog for good value recipes with all the nutritional values displayed. They are great for student friendly budgets. She is just doing her finals.
(Admin-I hope this is ok?)
I wouldn't know where to even start here as there is so much advice on this!!
I actually cut my food budget DOWN £25 a month by switching to healthier, non processed foods! The options are endless. Fruit and veg is cheap!! Chicken is (pardon the pun) Cheap!
Don't get conned into the misconception that living healthy is expensive.
There are tips and tricks you pick up along the way but there are loads of ideas.
Prime example - a medium sized chicken is about £3 - this can make 4 meals!! Yes - 4 meals.
They could easily be 4 different meals as well so you are not eating the same thing over and over!
Day 1 - Roast chicken and veg
Day 2 - Use some of the veg and make a soup for lunch - use chicken with pasta for dinner
Day 3 - If you've cooked a little extra pasta the night before, use this for lunch and Stir fry some chicken with veg for dinner
Day 4 - Chicken wrap for lunch (again veg can be used) - and then something different for dinner ... try a piece of pork! You can then use that in the same way as the chicken and BAM ... another 4 days could be different pork meals.
If you're fed up of chicken after a couple of days, make double portions of meals - eat one - freeze one!
Do this 3 or 4 times and you'll soon find you get a few weeks down the line with a freezer full of meals and all of a sudden you can have a week of different meals with cooking and - because you've already paid and made these ... you don't have to buy anything!!!
That's just a quick idea of what can be done on a low budget with fresh food.
It's all in the planning
